Prairie Grass Creamery is an ode to the prairie and the cows that feed on it, an origin often overlooked. All cream begins in the field. The space reconnects people with the prairie ecosystem that once covered the land, promoting awareness of how we source materials. Prairie Grass Creamery weaves the customers through the prairie and down into the production space, bringing them to the roots of milk and ice cream. The two triangular atrium’s rise from the prairie and lift the grass, opening to the deep earth below. They are linked by dual elevator shafts, used for easy transport of ingredients from the truck to freezer, as well as people. The production space is the heart of the creamery and sits snuggly under ground, being the link between the private and public spaces.

Prairie Grass Creamery & Dairy is designed to use every drop of raw milk that gets trucked in fresh from local farms. The creamery produces ice cream, milk, cream, butter milk and butter. It not only contains a vast ice cream tasting room over looking the baseline park, but a bakery and market that uses and sells ingredients made on site.

SOIL ANALYSIS OF SITE

The Baseline Development contains a variety of  Loam soils. In the past, the land was home to many farms, and before that it was a natural high alpine prairie. To the right there is a soil chart of the various types of loams soils on the development. The most productive soils are PIC (Platnar Loam) and UIC (Ulm Loam). The site for the creamery lies above the stream amongst Platnar Loam Soil, ideal for drought tolerant short grass species such as the Blue Grama.

ORGANIZATION

The organization of the Creamery was inspired by the deep prairie grass roots and digs deep into the ground in order to fit the 15,000 sq-ft program next to the pavilion on the small 150 ft x 130 ft lot. It maintains a low profile with a continuous green roof forming an intimate relationship with the ground and surrounding prairie. The large triangular atrium’s catch and reflect light into the public and private spaces below.
